Yummy nutritious muffins fit for breakfasts, lunches or snacks!

Feta Spinach Bacon Muffins

Gluten, grain, sugar free.
Prep Time 10 mins
Servings 12 muffins

Ingredients
  

  • 4 eggs
  • 1/3 cup olive oil
  • 1 cup almond meal
  • 1/2 cup tapioca flour
  • 2 tbsp chickpea flour
  • 1 tsp baking powder
  • ½ tsp sea salt
  • ½ tsp garlic powder
  • 2 tbsp nutritional yeast
  • ¼ tsp turmeric
  • ½ cup spinach finely chopped
  • 1 zucchini grated
  • ¾ cup ham or bacon chopped
  • 1 cup goats feta crumbled up
  • 1 tsp dried thyme or use fresh if you have it
  • 1 tsp dried oregano or fresh if you have it
  • 2 tbsp sunflower or pumpkin seeds sprinkled across the top of the muffins, optional

Instructions
 

  • Heat the oven to 160°C fan bake.
  • In a bowl whisk the eggs and add the olive oil.
  • Add the rest of the ingredients.
  • Spoon mixture in a muffin tray lined with brown paper and bake for 12-15 minutes.
