Super easy to make and nutritious. A great breakfast option or lunchbox filler.

Easy Apple Cinnamon Muffins

Gluten, dairy, refined sugar free.
Prep Time 10 mins
Cook Time 15 mins
Servings 12 muffins


  • ½ banana mashed
  • 2 apples grated
  • 3 eggs
  • ¼ cup coconut oil or olive oil
  • 2 tbsp raw honey
  • 1 tsp pure vanilla extract
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 1 cup almond meal
  • ¾ cup buckwheat flour


  • Preheat oven to 160°C fanbake. Mash the banana in a bowl.
  • Add all of the ingredients as they are listed and mix.
  • Line a muffin pan with brown baking paper pieces – spoon in mixture and cook for around 15 minutes, toothpick should come out clean.
