These tasty pikelets are a nutritious breakfast, with lots of healthful fats, protein and antioxidants.

Blueberry Pikelets

Gluten, grain, dairy, refined sugar free.
Prep Time 5 mins
Cook Time 5 mins
Servings 6 pikelets


  • ½ banana mashed
  • 1 egg
  • pinch of sea salt
  • dash of real vanilla extract
  • 2 tsp olive oil
  • ½ tsp cinnamon
  • 3 tbsp almond meal
  • 1 tbsp tapioca flour
  • 1 tbsp collagen
  • ¼ tsp baking soda
  • ½ tsp apple cider vinegar
  • ½ cup of blueberries or whatever berries you like


  • Mash the banana in a bowl and whisk in the egg.
  • Add all the other ingredients and mix.
  • Place spoonfuls in a pan greased with your fat or oil of choice.
  • Flip when bubbles begin and cook for a further 2 minutes.
